Award-winning Chef Craig Will from Stillwater in Launceston believes Tasmania is missing out on the economic opportunity of providing a much sought-after delicacy food. “We should be eating venison. Deer is not native but it is definitely part of what we are doing here. As far as wild shot deer is concerned, it is up there with the best of the best in terms of a quality food.
“It is a lean meat and it is healthy. From a chef’s point of view, it is the flavour that gets you every time that you can’t get in any farmed animal. It should definitely be utilised a lot more than it is. We should all should work on this together and make sure it happens and also to help control the numbers that are ruining our agriculture.”
